Summer Salad

The easiest salad ever.

Throw a bunch of mixed greens in a bowl – add cucumber, chow mein noodles, slices of heirloom tomato, avocado, shredded chicken and honey goat cheese. Top with your favorite dressing.

Simple Dressing:

2 garlic cloves, peeled

2 tbsp dijon mustard

1 tbsp apple cider vinegar

juice + zest of half a lemon

sea salt and pepper, to taste

olive oil

Pulse all ingredients together in a blender or food processor. Slowly drizzle in olive oil until the dressing is emulsified, and a smooth, pourable consistency. Store in a jar up to 2 weeks.

  1. This looks gorgeous. I have a thing with keeping things separate. Like I like having rice on one side of my plate and what goes with it on the other side of the plate, not like piled on top of the rice haha. So the picture above of all the separate ingredients is VERY appealing to me. I’m weird I know *sigh*
